You combine that with the shrimp. Did not know that Ms. Young has a new book out. She's been my go-to Chinese author for years and spot-on. Their flavor screams fresh and a bit biney, but rinse them a second time if necessary. I think they would work Very Well in this egg-based dish. I'll order Grace Young's new book as she is a trusted source around here.
